Hi everyone.
I want to welcome you to my little space on the World Wide Web, where I am excited to share some of my favorite recipes and stories of close friends, quiet nights at anchor enjoying great food, surviving several very scary hurricanes, several Thanksgivings at sea, an earthquake at anchor, flying fish, moon burns, a magnificent night at sea during one of the most spectacular meteor showers, and a whole lot more from my years in the Caribbean, Florida, the ICW, and New England aboard both our private 43 foot sailboat and also aboard various motor yachts where I was employed as a cook/chef and sometimes also as the first mate.
Every sailboat and motor yacht I’ve ever been on had their galleys (kitchen) on the port side of the vessel, so it just seemed apropos to name my website Portside Cuisine. Along the way, I’ll also share with you some of my favorite tips, techniques and timesavers (otherwise known as The Triple T’s, some herb and spice substitutions, a few of my favorite source links, and some product reviews.
