Broiled Shrimp Piccata Scampi

Instructions

1. Preheat your broiler with the rack 8 inches from the element so as not to scorch the shrimp tails.
2. COMPOUND BUTTER: Chop 1 tablespoon of the capers. Combine with the softened butter, parsley and the remainder of the capers, garlic and lemon zest. Season the butter with salt and pepper to taste.
3. SHRIMP TOPPING: Combine the Panko with the melted butter and crabmeat and check your seasonings again.
4. Layer the lemon slices in the bottoms of four greased 6 ounce broiler- safe casserole dishes and place on a baking sheet. Arrange 5 shrimp in each casserole dish in a single layer on top of the lemons with the tails leaning over the body of the shrimp above it. Divide the compound butter among the dishes, dotting it on top of each shrimp for maximum flavor.
5. Broil the shrimp for 5 to 6 minutes. Remove the shrimp from the oven and sprinkle the Panko and crab mixture over the top, then return the shrimp to the broiler until cooked through and the crumb mixture is golden, approximately another 2 minutes.
6. Serve immediately with a wedge of lemon and some fresh parsley.
