Ziti with Portobello Mushrooms, Caramelized Onions & Goat Cheese

Instructions

1. Slice the onions on the thin side into rings and separate the rings. Place them into a large sauce pan with about ½ cup water. Cover with a lid and place the pot on low heat. Leave them alone, stirring only a few times along the process of softening and cooking until they are soft and translucent. This should take about 15 to 20 minutes. Add a little more water if needed, but they should be fine if you keep the heat on low.
2. Once the onions are soft, melt 2 tablespoons of the butter and 2 tablespoons of the olive oil in a large skillet over medium heat. Add the onions, 1/2 teaspoon salt and the sugar and sauté, stirring frequently until the onions are well browned, about 20 minutes. Remove the onions and set aside.
3. In the same pan, melt the remaining butter and 1 tablespoon olive oil over medium heat and add the mushrooms and the remaining salt and sauté, stirring frequently until tender and browned, about 8 minutes. Add the onions back in, along with the parsley and the pepper.
4. In a large pot of boiling, salted water, cook the ziti until "al dente" (translation: firm to the tooth) and drain. Reserve 3/4 cup of the pasta water and drain. Toss the ziti and 1/2 cup of the reserved pasta water with the mushroom mixture. Add the remaining teaspoon of olive oil, the goat cheese and the parmesan. If necessary, add more of the reserved pasta water.
5. Serve with additional parmesan cheese.
