This is a very rich and decadent sauce that is one of my favorites. I especially love it on my many variations of Eggs Benedict. If you are looking to lighten the calories or eliminating the meat on your Eggs Bennie, try substituting the ham or bacon with slices of avocado. It pairs amazingly with the eggs and the hollandaise sauce!
