This recipe was passed down from my Italian Grandmother to my Mother. Everyone always raves about them. I’m sort of a “Meatball Snob’… I grew up knowing what a great meatball tastes like, and to me, my family recipe is hard to beat! Crumbling the meats into the breading mixture keeps you from overworking the meats and making them dense and tough.

EQUIPMENT NEEDED:
Large mixing bowl
Large wooden spoon, then your hands!
Measuring cups & spoons
Round baking pan (meatloaf) or loaf pan (meatloaf) or baking sheet lined with tin foil (meatballs)
Cooking spray

Serving Ideas: As a meatloaf, its great served with your favorite pasta, egg noodles, or mashed potatoes.

Ingredients

  • 1 pound ground beef
  • 1/2 pound ground pork
  • 1 1/2 cups bread crumbs, Italian seasoned
  • 2 large eggs
  • 1 cup grated parmesan cheese, or Pecorino Romano*
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt and pepper, each chopped parsley, to taste
  • 1 slice white bread, torn
  • 1/2 cup milk, to moisten bread crumb mixture, or as needed
  • Cooking spray
  • 5 1/2 cups your favorite pasta sauce
  • Olive oil

Instructions

  1. Mix together the bread crumbs, torn bread, grated cheese, salt, pepper, garlic powder and parsley.
  2. Add in the eggs and milk until bread crumb mixture is thoroughly moistened, but not too loose and soggy.
  3. Crumble the meats into the bread crumbs and mix together with your hands, being careful not to overwork the meat mixture. Overworking the mixture will make your meatballs or meatloaf tough.
  4. TO MAKE INTO A MEATLOAF: Preheat the oven to 375º F. Form the mixture into a big round ball with a flat bottom, place into a greased baking dish and bake for 40-45 minutes.
  5. Take out of the oven and spoon over your favorite pasta sauce and sprinkle with some grated cheese. Put the meatloaf back in the oven and bake an additional 15 minutes.
  6. TO MAKE AS MEATBALLS: Preheat your Broiler. Form the mixture into small balls about 1 to 1 1/2 inches in diameter. Place on a greased baking pan, and spray the tops with olive oil cooking spray to keep them moist.
  7. Broil for 5 minutes, turn the meatballs over and broil for an additional 5 minutes or until browned and cooked through.
  8. Serve with your favorite pasta sauce or brown gravy. They are also great just plain!
