My Grandmother emigrated from a hill town in Bracigliano in the province of Salerno to the U.S. aboard the S.S. Dante Alighieri and arrived at Ellis Island on August 11, 1926. This recipe has been created from what I remember her Tortellini filling to have been. The pasta is a new basic adapted to the quicker method of using your food processor. These tortellini are soft and loaded with flavor. I hope it might bring you back to memories of your Nona as it does to me.
