Avocado Wedges Wrapped in Serrano Ham

Instructions

1. Halve each avocado lengthwise, remove the pit, and then halve each section again into quarters and arrange on a large plate.
2. Heat the lemons in a microwave on high for 10 seconds to help separate the juice from the pulp of the lemon for easier squeezing and then squeeze the juice into a small bowl.
3. Dip the avocado quarters into the lemon juice to keep from browning. If they are too slippery, you can also use a basting brush and baste them thoroughly with the lemon juice.
4. Wrap the quarters with the ham, then drizzle with the extra-virgin olive oil and sprinkle with the cilantro. Pepper to taste. Arrange on a serving platter.
